Fueled by my passion, I left Louisiana’s bayous for the classrooms of the Culinary Institute of America in New York. There, I transformed my raw, familial culinary instincts into refined, professional skills. After graduation, I ventured across Europe and Asia. In places ranging from Italy’s trattorias to Bangkok’s street food stalls, I immersed myself, picking up new culinary tales and techniques.

Now, with a hint of silver in my hair and over three decades of experience, I’ve learned to value simplicity and authenticity in my dishes. My philosophy? “Let the ingredients shine. We chefs merely guide them.”
